Pan-steamed Eggs

Select pan based on the number of eggs you wish to prepare

Slightly oil the bottom of the pan with a combination of Sunflower oil and Butter

Heat pan until oil is hot but not burning

Add eggs

As soon as the whites opacify, pour a small amount of water (1/4 cup) around of edges of the eggs

Cover for 30 to 60 seconds and serve

Gently add eggs to hot skillet one at a time

Add water when albumin are opaque

Cover and allow the eggs to steam

Eggs are ready when the albumin over the yolks is also white

Place on waffles, pancakes, or toast. Let the yolks stream down!
